International Chef Exchange dinner: St Lucia comes to Brighton

Chef Craig Jones of Cap Maison in St Lucia joins Michael Bremner of Brighton’s 64 Degrees for a Caribbean inspired dinner in the Dome Room at Hotel du Vin on Thursday 24 August.

As part of the food festival’s on-going International Chef Exchange, Michael visited Cap Maison in June and created a menu of some of his most popular dishes from 64 Degrees at The Cliff restaurant at the five star Cap Maison resort on the north coast of the island. Craig will be bringing a taste of the sun to us in our late summer festival with a five course Caribbean-inspired menu.

Seared yellow fin tuna, compressed watermelon, avocado cream.

Caramelised jerk pork belly, crispy peas dahl, tamarind jam.

Island spiced braised Oxtail, tempura lobster and pumpkin curry.
