July 2014 saw the exchange of chef Tony Leck of The Pavilion in Guernsey with chef Semone Bonner of The Ginger Pig in Hove.

Tony’s Channel Island dinner was hosted at the Pig on Monday 14 July and a room of hungry customers and festival guests enjoyed four courses and canapés. Dishes included braised pork belly with scallops and black pudding puree, and seabass with saffron seafood and vine cherry tomatoes.

The following day Tony and Semone headed out on a food tour visiting the Smoke House on Brighton beach, the Kemp Town brewery, and the national cider collection at Middle Farm.

Semone headed over to Guernsey later that week and showcased a Brighton Beach BBQ themed menu. Dishes included Kentucky fried and potted rabbit, BBQ monkfish with potato salad, and Sussex Mayfield cheese bubble and squeak with quails egg and pickles.

Guernsey’s food tour included a visit to a local farm to see the island’s famous dairy cattle, a cider producer, and growers of mushrooms and micro-herbs.

Both chefs participated in a live radio link up between BBC Sussex & Surrey and BBC Guernsey, and the entire International Chef Exchange programme is being filmed for a new television series by Latest TV.

The exchange was supported by Visit Guernsey, Aurigny airlines, Ritter Courivaud, Ridgeview Wine Estate and Blackdown Sussex Spirits.

Over the course of the exchange, generous guests raised £500 for local charities in both Brighton and Guernsey.
