drakes is delighted to once again be participating in the International Chef Exchange, an exciting initiative created by the Brighton & Hove Food and Drink Festival. This time, we’ve thrown our net a little further than Europe and will be bringing a touch of the tropical Caribbean to the shores of Brighton.
On Wednesday 26 August we welcome top chef Craig Jones, from the highly acclaimed fine dining Cliff at Cap Maison on the glorious island of St. Lucia. drakes’ chef Andrew MacKenzie steps aside as Craig takes the helm in the kitchen at the restaurant at drakes to create a very special evening showcasing his unique French Caribbean fusion style.
“We are thrilled to be participating again in this wonderful event and look forward to hosting Chef Craig at drakes”, says drakes Sales Manager, Carla ter Maat. “The Exchange provides an exciting opportunity for the Chefs to experiment with different cooking practices and ingredients and showcase their culinary talents to a new audience.”
Including a glass of the Cap’s own Rum Punch, 3 fine dining courses, wine pairing, coffee and chocolate truffles from St Lucia’s Rabot Estate and finishing with their solera-blended rum.
This event is the first part of a reciprocal exchange for the Chefs. Andy will cook up a Sussex storm at the Cliff on Cap restaurant in St. Lucia for the second part of this exchange in October.
